You cant have FUN without Funfetti. Lame I know.

Last week, I was in Atlanta. For Business (Or Biznass whatever you wanna call it). My cousin’s girlfriend hired me to make her Birthday cake. Ace of Cakes styled. It required fondant and everything. She had no real specific demands. She even let me come up with the cake flavor and fillings/frosting. I like an idiot didnt take photos of the final product, I was mentally sapped to do that. However I did take pics of the process no doubt. But nonetheless, I got thru it after 3 days of late night baking. While I was working on that, I thought to make funfetti cupcakes to get in the celebration mood. You can’t spell funfetti w/o fun now. Corny? YEUP. Any who, here’s how they turned out. Oddly enough, the recipe yielded 7 cupcakes. Odd.I’m sure they were meant to be mini cupcakes or something. But they looked good though. Here’s the recipe from

  • 1-1/4 cups  flour
  • 1-1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/3 cup of butter, room temperature
  • 1 large egg + 1 egg white (I felt bad for that egg yolk all by its lonesome)
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 tbsp rainbow sprinkles

Oh and for the frosting, I did this

  • 1/2 cup butter
  • 2-3 cups powder sugar
  • 1 tsp vanilla
  • 2 tbspoons of heavy cream
  • 1/2 the bottle of sprinkes (about 3 tbspoons i guess)
