Return of the Trifle. Carrot Cake Trifle

Last time, I said I’d post pics of the carrot cake trifle. I was in a carrot cake face-off in my bible study group to see who had the best carrot cake. I was challenged after being put on blast on Facebook, so you know ya’ boy had to accept the challenge.

I decided to make a reprise of the carrot cake trifle.(If you asking yourself “Whatya mean ‘reprise’ click here. I swear it aint nothing illegal. Maybe.) This time around I decided to add some walnuts  that I chopped and toasted. Not in that order though.  Along with some fresh pineapple that I macerated (it does kinda sound like that other word. But it aint. get ya mind out the gutter y’all) in brown sugar and cinnamon overnight.  Et Voila the trifle

I had my buddy/guniea pig “Med Skool” try it. He loved it. So I was for sure thinkin I was gonna win the battle. The outcome: It was a tie. As much as I’d like to call shenanigans on that outcome. I’ll take it. At least it was as good enough as the other one. I’m not sure if I had tried the other one now that I think of it. I think maybe cuz I am somewhat competitive and refused to play nice?  Nah. That can’t be true. I dont ever really win at anything. Im usually the classy get graceful loser most times.

So I don’t know about y’all but I’m excited about Thanksgiving. Apparently most people forgot about and want to jump right to Christmas. Why?! We can’t forget about the turkey now! Anywho this year I’m basically making everything but the turkey and stuffing/dressing (Why is it both those names? I get confused sometimes about that).

I’m making Dessert, Cranberry Sauce and something with Sweet Potatoes. This weekend I’m doing a practice trial run with dessert. Wanna know how it turns out ?(I’m sure y’all bustin at the seams saying “YES!!!”)

Spinach in a smoothie. Yeup I’ve gone nuts.

 

As the statement above reads. I have put spinach in a smoothie and drank it. Surprisingly it wasnt bad. I know summer’s over, so I can’t blame it on a heat wave. Nor on alcohol for that matter. Now you ask Porque Ole Bill? or Pourquoi Ole-Bill? or Are you nuts? Explain yourself.

Well, in the last post I wrote about how last week I ran in a 5k and my time wasn’t a problem. It was my weight. I aint gonna sugar coat it. It’s probably a bad sign if more than 1/4 of you is made up of fat. Some people are kinda sensitive about their weight, I think being a guy, by default you can’t hide that. So I was looking up different cooking ideas to try and slim my chubby figure down some.

Now for the record I’m not ashamed to be chubby. I think I’m around the “damn near obese” status at this point, though I don’t look it.  So I decided to go into “Operation: Lose weight before Thanksgiving” and so far it’s harder than I thought (Now would be a point to say “No DUH! Sherlock)

So back to my smoothie idea: turns out green smoothies are pretty good  4 ya. Good for the digestive system and oxidants (I have no idea what that is exactly, but it sounds important though)

Here’s my recipe; Try if you want/dare

  • 2 Cups Spinach (Yeah I know it’s SPINACH)
  • 1 Pear  Chopped
  • 1 1/2 Cup Orange Juice ( I would suggest not buying the cheap bootleg kind for this type of drink)
  • 1  Banana

Blend smoothly and suck it up and down it. It’s not that bad, If I’m stupid enough to try and liked it. So can you.  Enjoy. And feel free to comment if you’d like.

My (never ending) search for the perfect Sugar Cookie.

Currently, I’m on a mission: I want the recipe for the BEST Sugar Cookie. Why? To be honest, no idea. I guess cuz I’m on this “cookie phase” and I’ve done Oatmeal and Peanut Butter Cookies, but Sugar Cookies. I have not. I find the Sugar Cookie to be a hard cookie to master. It looks SO easy, but yet there’s a kabajillion (yeup, I’m sure thats an actual number) different ways to make it.

But alas, I believe I have found it!!! So being my usual DIY-self. I gave it a try. Now note: I made these small sized. Porque? Because I am currently on another mission: I’m trying to drops some LB’s (thats pounds in hipster). Sunday I ran in a 5k, but I found out how much I weight and how much body fat I had at a clinic table and lets just say its probably not a good thing when 1/4th of you is made up of body fat.  I have no shame in admitting that.

So with that recent discovery, I’ve decided to cut back (not really) on the sweets.(HA! YEAH RIGHT) Mainly just smaller sized portions I guess. Operation “Lose Weight By Thanksgiving” is in full effect. Yesterday, I went and bought Spinach. For realz. But I’ll keep y’all posted about that laters. Here’s my recipe.

  • 3 C’s Flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder ( nice thing here, if you forget to add this, it’ll end up being Short Bread Cookies. So you can still eat ’em)
  • 1 C  Butter (Near Pudding like, I’m not a fan of the term “Softened”)
  • 1 C Sugar (Duh)
  • 1 1/2 tsp vanilla
  • 1 egg (Room Temperature)

Bake at 350 degrees(z) for about 8-10 minutes.

Note: Let the dough sit in the fridge for about 30 minutes, so the butter hardens up. And you can make them as big( or small) as you want.

Honey Dew Sorbet. Wait What?

So I’ve been on a bit of a “Hiatus” if you will. My trusty camera was broke. This made me sad. But now that it’s fixed. It’s all good now. So lately I’ve been obsessed with the dessert Sorbet. What is it exactly? Basically a fruit ice cream minus the eggs, cream and milk.

It’s a real easy thing to make too. One night at this restaurant, I tried Grapefruit Sorbet. It was GOOD. Didnt think that was possible. But Hey. Never know right? So of course the so-called “King of DIY” that I am, you know I had to try to make some. DIY sounds a little too close to DUI. It’s more a challenge saying then typing.

Anyways, I thought to try it with the Honey Dew melon. Something unusual. That  and I had bought one with making a fruit salad with it, but kinda forgot about it.  I don’t own an ice cream maker, so I had to make it the old-school way: Manually. It’s not hard, just a bit time consuming. Churning every 30 minutes is tough to remember. But no doubt it came out looking pretty and it even tasted like Honey Dew. SUCCESS!!! A bit sweet, but then again I think that’s Honey Dew for ya. So without further a dew (cheesy pun!! and I think that’s how you spell it.) Here’s the Honey Dew Sorbet

Pineapple Limeade. Does Sonic have this on the menu? They Should

Lately I’ve had an obsession with making food with pineapple. Also peaches, but that was in a post a while back. (See Peach Lemonade). Anywho I find that buying a whole pineapple trumps buying them in cans or cut up already. It’s not hard at all to cut up and dice. Not sure why people are scared to do it.

But this is another crazy idea I had with it being summertime and wanting to make a nice beverage for those days where you indoors when its damn near 100 degrees out and the humidity is at an all time high. Also this is part of my Summertime Project of summer-y desserts and beverages. (For those of you who have no idea and thought this was just random stuff, which it is.)

I’m trying to think of more witty stuff to say, but to be honest, today I’m fresh out. Phoowey. But I figured the pictures would speak for themselves today.

Note: You need about 2/3- or 1 cup of lime juice. Fresh Lime Juice. None of that bottle garbage(it’s not really garbage. I just wanted to sound all authoritative). And use about 2 cups of pineapple puree.  How much sugar and water (and soda water) is up to you.  Enjoy.

Carrot Cake and Pineapple Trifle aka fixed disaster

This is a lesson about life giving you lemons. Last week was mi padre’s b-day, and of course I was expected to make the b-day cake.  I decided on the classic carrot cake. I figured, no big. I done made the cake with the same recipe for damn near 2 years, got it.  However. (Note: I do take responsibility for my actions, but I also like to point it had been a looong time since I baked a cake) I somehow caused the cake to overflow all over the oven thus causing a lovely smoke fest in the kitchen. How embarrassing right?

But yes, even the allegedly talent cake maker like yours truly has a Snafu. (A nice way of saying screw up or the one w/the F word in it. Keep it PG folks). And it happened twice. (GASP!!! WHATS HAPPENED!!!) Now I had two sets of undersunk carrot cake, ready to be thrown away. Then my aunt threw the idea of taking it and putting it in a bowl and just serving it. I thought, NO. I wanted this sucker to look classy. Then I thought of the ” Trifle”. Basically the dessert version of lasagna. (Btw, why is there a “G” in there if you dont pronounce it?) And so I went with it cuz I had all that cream cheese frosting sitting in the fridge. I thought that it needed something to it. And then it hit me: Pineapple. I bought an whole Pineapple (note: PLEASE buy a whole pineapple, dont cop out and buy the chunks of it. It’s more fun to chop it up. Just saying.) early and chopped it up and threw it in that sucker. And Pops and the rest of the fam. loved it.

So in the sense, when life gives you lemons,you make the best damn lemonade possible.  Sorry for the long-wind story, but I figured I’d share that even ya boy has a SNAFU every now and then. But enjoy the photos my mishap.

Peach Lemonade. Heaven in a glass.

It’s (officially?) summertime. It only means two things: School’s out and it’s HOT as the dickens outside. (Side note: Anybody say dickens anymore??) Anyways, growing up and living Texas, theses were the fun times where you kept your butt indoors to not catch heat stroke. But maybe this is just one southern here speaking,but living in the south during the summertime: you gotta have Lemonade. GOTS TO!

There is sweet tea, but I’ve never liked tea though. Shocking I know. A southerner not like sweet tea.  But lemonade is one of those drinks that is necessary. Whether you laying out by the pool or indoors w/the AC on blast while the weather is 100+.  But having also growing up in Georgia. You gotta love peaches. I learned the hard way that peaches only are good during the summer. But I decided to make this attempt of Peach Lemonade after I saw it on a menu at a restaurant called “Bubby’s”.  And yes, this another one of my “Summertime Projects” I should consider putting a book together.Cuz I got sooo many things to make.

I have no idea if I replicated their recipe, but I put my twist to it.  But after the first sip, RIDONKULOUS! Even one of my friends “MED SCHOOL” (A nickname because he’s currently in Med School. Clever right?) Agreed. Now I gotta have this in my fridge esp when we’re heading thru the worst part of the summertime. It’s even better after a long day at the office. Well, for me it is anyways. When life gives you lemons (or limes…)part dos

You make Mousse. That’s right, mousse. I’ve had this desire(?)/notion to make more Mousse after I had made the triple mousse for the V-Day dinner. After that I felt like I should make more Mousse. I even like sayin the word “Mousse”. Anyways. along w/ making Clementine scones, I decided to make a Lemon-Lime infused “you know the word”. Kinda like a “Sprite Mousse”. I looked, apparently nobody has done this before. Could I have discovered a new dessert????!!! Prob not. Not sure if it’s a sure fire thing, trying to balance the tart-ness of lemon and lime w/ sweetness of the whipped cream. Listen to me talk like one of those hipster-foodie folks. But it’s delish though.

This is what happens when you get bored while “working”

Dang, long time no post-ies. Apologies to the (two/maybe three) folks who read this thing. I’ve had quite a busy few weeks w/ work and now I’m on vacay (Hipster for vacation). Anywho I’ve been working on a feature for the local paper for the past month and a half. I finally finished it!! HUZZAH!!! But I’ve been at this coffee shop called “Signs of Life” for the past three/four days now writing that sucker to no end. But I finally got it done, another victory HUZZAH!! Anyways, when I would be bored/stuck trying to think of the words to say( I feel like that’s a song somewhere. Anybody know?) I would bust out the handy-dandy camera and shoot. Lighting=Ridonkulous. So here’s what I did one day. Enjoy.

2011 Half-Marathon Championship Candids

Over the weekend, there was the USA Half-Marathon Championships were in town, it featured a lot of elitist runners from across the country. Also it was a preview for what will be the course for the Olympic Trials next January. I managed to get up early to watch it, also as practice because I had to wake up and run the next morning in a 5K. It was pretty interesting race to say.
