A somewhat sentimental thought involving a Linzer Tart

SO, before I get to randomly yapping about the Linzer Tart…I just wanted to say somethin.

We should appreciate those around us more…. Even if we barely know their names.

A while ago, I noticed this homeless lady that would sit out by the highway whenever I would drive pretty much anywhere…Usually a few times a week.

For whatever reason (maybe cuz I got some friggin big heart or somethin)I felt compelled to help her as best I could.

Am I made outta money? HA! no. But can I cook? Si.

So I tried to give her food out of my pantry…technically thats illegal here, but to that I say (excuse my French) Screw it..yeah I said it.

Mainly during the Summertime, I’d give bottle water, that I feel is more important…got keep from that pesky heat stroke…

I’m pretty sure she found it quite odd and random for a guy to keep trying to keep giving her water and food…

Esp since we live in a “ME FIRST!! YOU LAST!” kind of society…its always nice to go against that notion I guess.

Well a couple days ago at the bus stop across the street, I saw a vigil placed on one of the seats…I noticed it saying “RIP MS. CLEO” (no not the psychic lady)

And I slowly put the math together: Hadn’t seen her in a while and she wore sandals… those sandals were placed on the bench….

I guess what I am saying is that, yeah you may barely know a person, but appreciate what they bring into your life.

Sure sometimes it aint always the best, but it’s memorable no doubt…

So this post and tart is dedicated to that idea

Linzer Tart

Not exactly the cheerful post y’all prolly expected, but I just wanted to get that out there.

Well to cheer y’all up, I wanted to inform y’all this weekend: I shall be running in one half of a half-marathon.

That’s right, I shall be running in a 1/2 marathon relay…hopefully I wont get cramps.

Or a wardrobe malfunction or whatever… I know I will be wanting Kolaches after its all said and done.

Red Velvet Cake: Trying to make something sweet from a (very) bitter situation

Now this aint the first time I’ve messed with Red Velvet. I made some for V-Day. And usually I’ve got some sorta witty banter to go along with it.  But this post is gonna have something more to it. At least I’ll try.

I made this cake for a dude in my bible study class. Last week his pop’s suddenly passed away. We heard that he was at the hospital that night during class. It was obviously depressing to hear, but what’s worse is that it’s somethin you really can’t prepare for. Better yet make time out for it. Yeah we can make time out for a football game or schedule a business meeting. But when somethin like that happens, it’ll happen whether you prepared or not. Most times you on the side of being unprepared. Definitely changes your outlook on what you may think is important. i.e. money, a job, trying to be popular, or whatever silly things we put in front of ourselves.

As a class we thought to make food for him and his family. I being the dessert guy that I am thought to make Red Velvet. Why? For some reason I’ve always felt like Red Velvet was one of those things to have whether it’s a triumph or tragedy. A handful of us went over to eat dinner with the family. They were being as upbeat as they were considering it had been a few days since. And watchin them reminisce while trying to enjoy the food had me thinking. Food really does bring folks together.

I know it does sound cliche. But it’s the simple truth. Whether it’s good or bad. Food can bring us all together. And in a way food is like life. Something we take for granted yet at the same time it’s hard not to try and savor each bite, kinda like each bite is like a moment in life. That don’t sound corny does it? Why do you think they ask: “If you could have one meal what would it be?”

Not sure if that makes people think, or if it even made sense. But maybe somebody out there feels that way. Instead of saying “enjoy”, i’ll just say Savor the moments you got and don’t let small stuff get too big in your life because when you look back, im sure you wanna remember the good then the bad.

My (never ending) search for the perfect Sugar Cookie.

Currently, I’m on a mission: I want the recipe for the BEST Sugar Cookie. Why? To be honest, no idea. I guess cuz I’m on this “cookie phase” and I’ve done Oatmeal and Peanut Butter Cookies, but Sugar Cookies. I have not. I find the Sugar Cookie to be a hard cookie to master. It looks SO easy, but yet there’s a kabajillion (yeup, I’m sure thats an actual number) different ways to make it.

But alas, I believe I have found it!!! So being my usual DIY-self. I gave it a try. Now note: I made these small sized. Porque? Because I am currently on another mission: I’m trying to drops some LB’s (thats pounds in hipster). Sunday I ran in a 5k, but I found out how much I weight and how much body fat I had at a clinic table and lets just say its probably not a good thing when 1/4th of you is made up of body fat.  I have no shame in admitting that.

So with that recent discovery, I’ve decided to cut back (not really) on the sweets.(HA! YEAH RIGHT) Mainly just smaller sized portions I guess. Operation “Lose Weight By Thanksgiving” is in full effect. Yesterday, I went and bought Spinach. For realz. But I’ll keep y’all posted about that laters. Here’s my recipe.

  • 3 C’s Flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder ( nice thing here, if you forget to add this, it’ll end up being Short Bread Cookies. So you can still eat ’em)
  • 1 C  Butter (Near Pudding like, I’m not a fan of the term “Softened”)
  • 1 C Sugar (Duh)
  • 1 1/2 tsp vanilla
  • 1 egg (Room Temperature)

Bake at 350 degrees(z) for about 8-10 minutes.

Note: Let the dough sit in the fridge for about 30 minutes, so the butter hardens up. And you can make them as big( or small) as you want.

Watermelon Limeade, The New Drink for the Fall??

Ignoring the title, obviously it’s Fall. Or “Autumn” if you wanna be fancy about.(You fancy huh?) But as I’ve said in every other post, Fall doesnt exist down here in Texas. It’ll drop from being 100 degrees, but don’t expect 50 degree weather for a LOONG time. So it’s still fair game to have summer-y(that a word?) drinks. Maybe til Christmas.

One day,I was driving by a certain drive-thru restaurant that serves limeades.(It rhymes with Bonic). I used my free Cherry-Limeade coupon to get me’s a free drink. But I notice they had different flavored Limeades, technically they were slushy limeades. But they had Orange and Watermelon and Coconut. (Me,myself not a coconut lover, though ocean water is GOOD.)

So being my usual DIY-king self. I had to at least try the Watermelon idea. I know the Watermelon Lemonade idea exist, that’s next on my hit list. By that I mean agenda. Nah, it’s an actual hit list. Oh btw: I gave this site a new Jenny Jones Makeover!! Yaay!! I figure since I changed the name of it, why not changed the look of it too. No? Tell me whatcha think, and also if you like the drink. Or just write whatever you like, as long as it’s nice. Don’t be mean. Lolz.

Oatmeal Chocolate Chip Cookies. That aint a mouthful

Cookies. My latest craze. Some reason I go thru phases with baking. For a while, I wanna just make cakes. But then again, I’d be fat-er than I am at the moment.  And then there was that whole Cupcake craze. I mean it’s got its own show. But apparently, cupcakes are out. (How? I wonder)

But for me, Cookies are now my latest dessert craze. Think they’ll ever come up with a “Cookie War” show? Where they gotta put Pulled Pork in a cookie? That’d be funny and nasty.  Anyways, I decided to enter this contest, a holiday exchange thingy. It’s on the website “My Baking Addiction” along with the website “Good Life Eats“. Gotta give ’em a shout out for this. I think it’s dope. Esp. since the first week is about chocolate. Sponsored by Scharffen Chocolate

I’m not a HUGE chocolate addict. But I like my fix of it, every now and then. If it’s Peanut Butter, that’s a whole other story. So I could’ve gone over the top and done chocolate on chocolate on top of chocolate with a glaze of chocolate with a sprinkle of chocolate. But I wanted to do something different. Make chocolate chip cookie, with a TWIST!! HAHAAA!! (I’m so clever)

So I took one of my cookie recipes I concocted and put together Oatmeal Chocolate Chip. I feel like that’s an underrated cookie. Or passed on a lot cuz if you want Oatmeal in a cookie, it’s gotta have raisins. I despise raisins. So I wanted to switch it up a bit. When I made these cookies, I had my bud “Med Skool” try ’em out. He liked how they were almost cake like. I didnt notice that the first time I ate one. But that happens when you cream butter and sugar to make it fluffy.  So without further adew my recipe for Oatmeal Chocolate Chip Cookies along with pics. Cuz other wise, it didnt happen.

3/4 C Flour

1 C Flour

1/2 tsp baking soda

1/4 tsp baking powder (that’s right add it. Don’t you forget it!!!)

1/2 tsp salt

1/2 C Chocolate Chip (Anything from bitter to semi-sweet will do)

1/2 C Butter (Softened. Kinda like putty. Though I wouldnt wanna touch that though)

1/2 C Brown Sugar

1 Egg

1 tsp Vanilla

Bake for 9-10 minutes at 350 degrees.

Texans Training Camp 2011

Dang, nearly a month has gone by since I posted on here. I suck. I apologize to the 3 people who maybe follow this site. Long story short: Procrastination and A wedding cake. The wedding cake, I’ll explain next time. Which I promise will be sooner than 30 days. Anywho, last Friday, I went to the Texans training camp.

I don’t know about y’all, but I’m THRILLED to see football is back. Fantasy Football especially (H-town’s Finest will do work this year!)

I was happy to be able to watch the team practice, I wasnt happy about standing in 95 degree weather w/ humidty at 8:30 in the morning. That’s Houston for you. But one that’s nice, all the stadiums have retractable roofs. So we wont roast in September. YA!! I’ll hush now, and I’ll put up the pics. Enjoy.

Flourless Chocolate Cake. Hold Up, What??

Last week, I made a cake for a girl I used to work with. However, it had to be flourless (GASP!) because she’s on a glute-free diet. For a while I had no idea that was even possible. Shows what I know. But then again I recall I had done this before, a few months ago I made a triple-mousse cake.(I just figured how to do the link thingy. Im so proud!!) And the dark-chocolate part had no flour in it. So this wasnt too hard to pull off.  You just need a lot of eggs.  I got the recipe from the book “BAKED”. It’s become one of my favorite books to read.

Note: Separating the eggs, VERY importante. The egg whites once whipped into foamy peaks is what gives the cake it’s shape. Otherwise, it’s a droopy mess that will seep out of the Springform pan.

Oh and Happy June 1st everybody! No idea what that means on the calendar. But I decided this summer, I got a list of stuff I’m gonna attempt to bake and as well as beverages this summer. Gotta have somethin to wash down all these desserts with. Stay tuned y’all!

German(But it aint from Germany) Chocolate Cake

For easter, I went to KC w/my bestie Luke to his aunt’s house for Easter dinner. Though it was at 1pm. Why do they call it dinner then??? Anyways I brought over one of my fav desserts to make: German Chocolate w/ Pecan Coconut filling w/ Chocolate Cream Cheese frosting. A mouthful to say and eat. For some odd reason, I love to make it, yet I dont eat it. Crazy right? I’m not too keen on coconut. Odd. But it was a smash.

Sidenote: You know that German Chocolate isnt from Germany?(WHAA!) It actually was named after a guy named Sam German who discovered a baking chocolate that was sweet. Typically Baking Chocolates are Bitter, Semi or Unsweetened. (I sound smart) And thus the name and about 100 years later a Dallas Newspaper had a recipe for German Chocolate. I feel like I can be Alton Brown cuz I sound like a nerd.

This is what happens when you get bored while “working”

Dang, long time no post-ies. Apologies to the (two/maybe three) folks who read this thing. I’ve had quite a busy few weeks w/ work and now I’m on vacay (Hipster for vacation). Anywho I’ve been working on a feature for the local paper for the past month and a half. I finally finished it!! HUZZAH!!! But I’ve been at this coffee shop called “Signs of Life” for the past three/four days now writing that sucker to no end. But I finally got it done, another victory HUZZAH!! Anyways, when I would be bored/stuck trying to think of the words to say( I feel like that’s a song somewhere. Anybody know?) I would bust out the handy-dandy camera and shoot. Lighting=Ridonkulous. So here’s what I did one day. Enjoy.

Triple Mousse Cake (I swear im secretly making this a food blog)

A while back for a V-day singles dinner, I w as responsible for dessert. Apparently I’ve become the go-to-guy for desserts primarily cakes. I kinda like it. Anyways, I made a Triple Mousse Cake.  A cake made of mousse of three different chocolates: Dark Chocolate, Semi-Sweet Chocolate and White Chocolate. I actually cooked this live in front of an audience (over Skype). It was kinda like hosting my own cooking show. It apparently was a hit because EVERYBODY at the dinner was requesting a slice. Even demanding I give up the recipe. (Note I got it from an online site called “Annie’s Eats”.) Here’s how it came out :
